The magic before the magic. This is the place where the world’s best pizza ovens are made: the workshop of Mario Acunto in Napoli. The man is a genius. It’s hard to find... but worth it. Bring a translator if you don’t speak Italian.
On November 10th, 2017 we traveled to the outskirts of Naples, Italy with Bambolina’s Chef Larry to meet the man who made the oven, Mario Acunto. Mario makes each oven by hand with a small group of highly skilled craftsmen and they are able to produce only about 100 each year. The ovens are shipped to the best pizzerias across the globe which makes them hard to get. Next time you’re in Bambolina, take a look at the front of the oven and you’ll see “Acunto M.” stamped there.
